5 egg whites
Sugar 200 g Salt
200 grams of butter
1 tablespoon vanilla extract Tips

Preheat oven to 180 º C. Pan of cupcakes prepare the papers we have chosen.

Sift flour with baking powder and salt. Mix in vanilla extract and milk. With electric rods whisk the butter until fluffy. We are gradually adding the sugar non-stop beating until the mixture whitens.

Add the flour three times, alternately with milk, add two times. Mix well until everything is integrated.

In another bowl Beat the egg whites until stiff, until peaks form. Add a third of whites into another mixture to lighten. The rest is added in twice, taking care not to lose the clear, until well incorporated.

Divide the mixture into the mold of cupcakes, filling out papers to ¾ full. We remove the tray to remove air bubbles and introduce it in the oven.

Bake for 15/20 minutes, until well done inside, checking with a needle. We took them out of the oven, let the cupcakes in tray 2 or 3 minutes and then stripped to cool on a rack.

Swiss meringue butter with remaining ingredients.

Mix the egg whites, sugar and salt and put them in a double boiler, stirring constantly with a whisk until the sugar dissolves.

Put the mixture in a container to be assembled with electric rods. We started at low speed just at maximum speed until the mixture forms peaks and cool completely.

changed the attachment to the paddle attachment and add the butter little by little at low speed. When we're done we add the vanilla and continue stirring slowly until the mixture is completely smooth and fluffy.

If we color the mix, now is the time. Add a few drops of the chosen color and stir until well distributed.

merengue reserve tight lid on if not going to use time or put it in the pastry bag with nozzle chosen to decorate.

Once the cupcakes are very cold, decorate with meringue and finish off with the tips that we want for each case.

This time I chose the Valentine's decorations to participate in the HEMC51 this month, which is organized by Manuel de " Cooking with Manu Catman. "

which I am not nor have I ever held celebrate Valentine's Day, but hey, there are always excuses to decorate cupcakes and cookies. I can not help ... ..

I used to publish the basic recipe of Martha Stewart in his book "Cupcakes " . They are the best cupcakes I've tried, but for the people you like decorating, I recommend them because they are very strong, completely glued to the paper and not on the surface crumbles. Perfect for decorating.
