Preparation:
Preheat oven to 180 º C. Pan of cupcakes prepare the papers we have chosen.

Add the flour three times, alternately with milk, add two times. Mix well until everything is integrated.
In another bowl Beat the egg whites until stiff, until peaks form. Add a third of whites into another mixture to lighten. The rest is added in twice, taking care not to lose the clear, until well incorporated.
Divide the mixture into the mold of cupcakes, filling out papers to ¾ full. We remove the tray to remove air bubbles and introduce it in the oven.
Bake for 15/20 minutes, until well done inside, checking with a needle. We took them out of the oven, let the cupcakes in tray 2 or 3 minutes and then stripped to cool on a rack.

Mix the egg whites, sugar and salt and put them in a double boiler, stirring constantly with a whisk until the sugar dissolves.
Put the mixture in a container to be assembled with electric rods. We started at low speed just at maximum speed until the mixture forms peaks and cool completely.
